Makes 20 clusters
Ingredients:
¾ cup chopped bittersweet chocolate (at least 80% cacao, ideally stevia sweetened)
¼ cup unsweetened dried cranberries
¼ cup slivered toasted almonds
1 tablespoon dried raisins
1 tablespoon unsweetened dried coconut
How to make:
- Put a medium saucepan over low heat, melt the chocolate slowly, careful not to burn it.
- While the chocolate is melting, mix cranberries, almonds, raisins, and coconut in a separate bowl.
- Pour the dried fruit mixture into the melted chocolate, stirring to coat. You’ll need to work quickly so the chocolate doesn’t set. If it gets hard, simply heat it for 10 seconds.
- Spoon teaspoon-sized dollops onto a parchment-lined sheet tray and freeze for about 10-15 minutes or until set. You should be able to make 20 clusters.
- Once set, transfer to an airtight container then store in a cool place until serving.
