Serves 2-4

SALAD Ingredients:

3 large tomatoes, diced
3 cucumbers, seeded and diced
2 yellow bell peppers, diced
3 chicken breasts, roasted and diced
¼ cup sliced black olives
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon dried oregano

Note: For the vegetarian option, consider adding 2cups of tofu or black beans instead of chicken

DRESSING Ingredients:

2 cloves garlic, crushed
½ cup goat cheese, crumbled
½ cup red wine vinegar
1 lemon, squeezed juice
1 teaspoon dried oregano
1 teaspoon Dijon mustard
½ cup extra virgin olive oil

How to prepare:

  1. Make the dressing. Whisk garlic, goat cheese, vinegar, lemon, oregano, and mustard. Gradually add in the olive oil while mixing. Set aside.
  2. In a large mixing bowl, combine the peppers, onions, tomato, cucumber, and chicken. Season with salt, pepper, and oregano. Add the olives.
  3. Pour in the dressing and serve.
