RAINBOW SALAD

Serves 1

SALAD Ingredients:

1 cup cooked quinoa
1 jalapeno pepper, seeded and sliced
½ small red beet, sliced
¼ purple cabbage, sliced
1 yellow bell pepper, sliced
¼ cup pickled red onion
½ cup lightly sauteed kale
¼ cup sliced radishes
¼ cup avocado
1 hard-boiled egg

DRESSING Ingredients:

¼ cup minced cilantro
2 limes, squeezed juice
¼ cup extra virgin olive oil
¼ cup red wine vinegar
¼ teaspoon salt
¼ teaspoon garlic powder
¼ teaspoon red pepper flakes
¼ teaspoon black pepper

How to prepare:

  1. First, make the dressing. Combine all ingredients in a jar and shake well. Set aside.
  2. Assemble the bowl: Add the quinoa to a large bowl (or you can use a to-go container). Top with the vegetables and add the egg.
  3. Drizzle the mixture with the dressing.
