Serves 4
Salmon Ingredients:
4 (6oz) salmon fillet
1 tablespoon olive oil
1 teaspoon sea salt
1 teaspoon cumin
1 teaspoon sweet paprika
Salsa Ingredients:
1 ripe avocado, diced
2 plum tomatoes, diced
1 clove garlic, minced
1 teaspoon extra virgin olive oil
Juice of 2 limes
½ teaspoon sea salt
½ teaspoon black pepper
¼ cup minced cilantro OR parsley
1 tablespoon hot sauce (optional)
How to cook:
- Combine all salsa ingredients in a large bowl. Add more salt and pepper as needed. Set aside.
- Combine sea salt, cumin, and paprika in a small bowl. Sprinkle over salmon fillets.
- Preheat oil in a skillet on medium fire. Add salmon and increase heat to high. Cook for 3 minutes, turn over, and cook for additional 5 minutes or until salmon is flaky.
- Serve 1 fillet per person, with salsa on the side.
