Serves 4-6

½ cup extra virgin olive oil
2 sweet potatoes, washed and diced
1 yellow onion, diced
1 red bell pepper, diced
4 links turkey sausage, crumbled (optional)
1 clove of garlic, minced
2 cups baby spinach
1 teaspoon sweet paprika
½ teaspoon cumin
½ teaspoon black pepper
½ teaspoon dried sage
Salt to taste

How to cook:

  1. In a large skillet, heat the oil over medium-high heat. Add sweet potatoes, spices, and a pink of salt. Sauté for 7-10 minutes, until browned and tender.
  2. Add onion, bell pepper, and sausage. Cook for about 4 minutes. Add garlic and continue sautéing.
  3. Add spinach. Cook until done. Season with salt and pepper.
  4. Serve it plain or with eggs for a healthy and full breakfast.
