SOBA NOODLE BOWL

Serves 1
Noodles Ingredients:
1.5 oz dry soba noodles
2 oz peeled, deveined raw shrimp, tail removed
4 cloves garlic, diced
¼ cup green peas
1 red bell pepper, cut into strips
4 green onions, cut into 1-inch length
2 teaspoons sesame oil

Dressing Ingredients:
1 tablespoon sesame paste (tahini)
1 teaspoon sesame oil
1 teaspoon sriracha (optional)
½ lemon juice
1 teaspoon soy sauce
1 crushed clove garlic

How to cook:

  1. Cook soba noodles according to packaging instructions. Drain and toss in a tiny bit of sesame oil to keep it from sticking and set aside.
  2. Make the dressing: Combine all ingredients in a small bowl or jar. Whisk until all ingredients are combined. Set aside.
  3. Heat a large skillet (preferably cast iron; NOT non-stick). Toss onions and pepper with 1 teaspoon of sesame oil, and add to the pan, letting char slightly before turning. Cook for 3-5 minutes then remove from the pan.
  4. Wipe the pan clean, return to medium heat, and add the remainder of the sesame oil. Add shrimp and sauté for 5-6 minutes until cooked through. Add peas and cook for an additional 2 minutes.
  5. Toss noodles with the dressing and put them in a bowl. Top with the shrimp and veggies.
  6. Enjoy your soba noodles HOT or COLD.
