SWEET POTATO WITH CHORIZO BURRITO

Serves 4

Ingredients:
½ teaspoon ground cumin
¼ teaspoon ground coriander
¼ teaspoon ground cinnamon
1/3 teaspoon ground cloves
1/3 teaspoon oregano
1/3 teaspoon thyme
½ teaspoon paprika
½ teaspoon cayenne pepper
¼ teaspoon garlic powder
½ teaspoon sea salt
1 tablespoon extra-virgin olive oil
2 (7oz) sweet potatoes, peeled and diced
Olive Oil
2 red bell peppers, sliced thinly
1 green bell pepper, sliced thinly
½ red onion, sliced thinly
1 cup black beans
1 bunch of Swiss chard, thinly sliced
Juice of 2 limes
¼ cup plain Greek yogurt
1 tablespoon red wine vinegar
¼ cup diced cilantro
½ cup guacamole


How to cook:

  1. In a small bowl, combine the spices and set aside.
  2. Put a large skillet over medium heat and pour olive oil. Add sweet potatoes and sauté until tender. Add 1 tablespoon of chorizo seasoning and cook until fragrant. Transfer to bowl and set aside.
  3. In the same skillet, heat olive oil. Sauté peppers and onions until tender. Add black beans, Swiss chard, and cook for another 2 minutes or until chard begins to wilt.
  4. In a separate small bowl, whisk lime juice, yogurt, vinegar, and cilantro. Set aside.
  5. Transfer the chard mixture into 2 bowls and top it with sweet potatoes. Drizzle with the yogurt dressing. Garnish with radishes and guacamole.
