Serves 4
Ingredients:
½ teaspoon ground cumin
¼ teaspoon ground coriander
¼ teaspoon ground cinnamon
1/3 teaspoon ground cloves
1/3 teaspoon oregano
1/3 teaspoon thyme
½ teaspoon paprika
½ teaspoon cayenne pepper
¼ teaspoon garlic powder
½ teaspoon sea salt
1 tablespoon extra-virgin olive oil
2 (7oz) sweet potatoes, peeled and diced
Olive Oil
2 red bell peppers, sliced thinly
1 green bell pepper, sliced thinly
½ red onion, sliced thinly
1 cup black beans
1 bunch of Swiss chard, thinly sliced
Juice of 2 limes
¼ cup plain Greek yogurt
1 tablespoon red wine vinegar
¼ cup diced cilantro
½ cup guacamole
How to cook:
- In a small bowl, combine the spices and set aside.
- Put a large skillet over medium heat and pour olive oil. Add sweet potatoes and sauté until tender. Add 1 tablespoon of chorizo seasoning and cook until fragrant. Transfer to bowl and set aside.
- In the same skillet, heat olive oil. Sauté peppers and onions until tender. Add black beans, Swiss chard, and cook for another 2 minutes or until chard begins to wilt.
- In a separate small bowl, whisk lime juice, yogurt, vinegar, and cilantro. Set aside.
- Transfer the chard mixture into 2 bowls and top it with sweet potatoes. Drizzle with the yogurt dressing. Garnish with radishes and guacamole.
