2 cups rolled oats
2 cups unsweetened coconut or almond milk
3 small zucchinis, grated
2 apples, grated
1 cup raisins
1 cup walnuts
1 teaspoon cinnamon
1 tablespoon grated ginger

How to cook:

  1. In a large bowl, combine the zucchini, apples, cinnamon, and ginger. Let sit for 5-15 minutes for the flavors to blend.
  2. Preheat oven to 325°. Spray a 9×13-inch baking dish. Add oats, almond or coconut milk, raisins, and walnuts. Stir to combine well.
  3. Transfer mixture to the prepared baking dish and bake for 30-35 minutes, until set.
  4. Cut into six (6) equal parts. Serve for breakfast or store in the refrigerator for ready-made breakfast.
