Ingredients:
3 eggs
1 cup spinach
¼ cup canned or cooked black beans, rinsed
¼ avocado, diced
1 cup baby spinach
¼ onion sliced
1 link turkey breakfast sausage, diced
¼ teaspoon sweet paprika
¼ teaspoon cumin
½ teaspoon salt
¼ teaspoon olive oil
How to cook:
- Beat eggs into a bowl and add a pinch of salt, whisk until well scrambled. Set aside.
- In a pan, heat half of the oil over medium-high heat. Add the sausage and onion, along with the cumin, paprika, salt, and beans until tender.
- Add spinach and cook until wilted. Scrape the mixture into a bowl and wipe the pan clean.
- Add the remaining oil and adjust the heat to medium-low. Add eggs and let cook until set, 3-5 minutes.
- Remove to a plate and spread the filling over half the omelet. Fold over to create a half-moon shape.
Serves 1
