½ cup oats
¼ cup canned pumpkin
¼ cup low-fat milk or unsweetened almond milk
½ tsp pumpkin pie spice
½ tsp vanilla extract
1 tsp olive oil
pinch of baking powder
1. Blend ½ cup oats into a flour.
2. Add 1 egg, ¼ cup canned pumpkin, ½ banana, ¼ cup low-fat or unsweetened almond milk,
½ tsp pumpkin pie spice, ½ tsp vanilla extract and a pinch of baking powder.
3. Heat 1 tsp olive oil in a non-stick skillet on medium.
4. Add batter, when bottom is browned flip and cook on the other side until set.
